This book is a journey through the markets and dining tables of three continents, at the hands of an artist impassioned with the world of cuisine, Santi Santamaría. With over 450 photographs, the reader will discover an intentionally heterodox analysis of what is cooking in the private and professional kitchens of today’s world.
He begins his journey in Galicia, home to western civilisation. His itinerary around Europe passes through Italy, France, Portugal, Switzerland, Germany, Belgium and Great Britain, with two very significant stops: Paris-Monte Carlo; and the different national and regional cuisine in Spain, which Santamaría looks at to the last detail.
Santi Santamaría’s Asia begins in Turkey, and passes over to the Far East. His fascination for oriental fruit, spices and culinary techniques is made evident in these pages. His culinary wanderings around the world end up in America, where Santamaría lends us his opinion on the cuisine of the North.
Finally, Santamaría returns home. And revisits the status of private kitchens and diet in general in our society: large hypermarkets, transgenic products, food handling, tobacco and gastronomic snobbery. He closes the book by making a balance of the past and present of the culinary profession in Spain.
